3.5L+ Slow cooker, such as:
Morphy Richards 48710 Oval Slow Cooker, 3.5 Litre, Stainless Steel
Leg of Lamb
Sprinkle of Mint
Sprinkle of Rosemary
Sprinkle of Turmeric
Peel the sweet potato but don’t chop it. Mix all ingredients together in any order. Pour cold water over it all, leaving about 1 inch of meat out of the water.
Set to cook on low heat for 6-10 hours.
It should come out very tender. The meat will be soft and falling off the bone. The liquid should be thick due to the gelatin. The sweet potato should fall apart easily too.
Plate it up into a dish with high sides (for serving with plenty of juice) and a twist or two of high quality salt such as Himalayan salt.
