This is a gluten free, high nutrient meal that uses rice flour as it is a lighter flour. The batter helps keep the moisture in the aubergine and so allows you can use less oil. Adding lemon increases the Acidity.
- Red and Green Peppers
- Brown Rice Flour
- 1 Egg
- Lemon juice
- Aubergine slices
- Dip the sliced Aubergine in whisked egg and then in rice flour and do that with each slice until each side has browned in a frying pan.
- Cut the peppers into julienne’s.
- Put the aubergines in the bowl and put the egg in the dish aswell. lastly, put the peppers in the top of the bowl and it is done.
It should take 30 minutes to make.then eat.
