This is a dish where you mash potato with a binding agent and the grated potato caromelises (cooked in butter and salt).
It is South Chilean dish originating from the Chiloé Archipelago, but I have put a British twist on it; the potatoes are British, the butter is British.
I cooked them without flour, but adding flour does make them hold together better.
Equipment you will need:
- Mixing bowl
- Large oven tray
- Peel the potatoes first, its easier than taking the skin off after. It is also healthier. (5 minutes.)
- Boil half the potatoes
- Grate the rest raw. so you have an even amount each
- Add the butter and cook in the oven or pan, should take an hour.
